When I was 20 years old, I spent nearly a year in Paris for my studies. I discovered the Parisian bistros and all those incredible dishes. This very comprehensive course is truly amazing. This has to be one of the most ambitious yet most rewarding desserts I have ever made. The ganache was smooth, the biscuit was amazing, that combination of coffee and chocolate was mind blowing, and that buttercream may be the best frosting I have ever tasted. I though of sculpting a mask out of white chocolate and a rose out of regular chocolate but I decided to keep it subtle.

Paris-Best!
The Paris-Brest is possibly my favorite dessert. I first had it on a Parisian balcony with a view of the Eiffel Tower and came to this course to learn how to make it. This expands on and improves an already awesome pastry, and goes into explanations of individual components and how to make them right, such as the choux and diplomate cream. A good way to challenge yourself and love the results!
